Most of the fats we consume daily are made up of long-chain triglycerides (LCT). Coconut oil, on the other hand is made up of medium chain triglycerides (MCT).

That means that the smaller MCT found in coconut oil digest rapidly enough that your body is able to use them almost immediately as a source of energy rather than store them away inside fat cells for later use.

Because of that, they don’t contribute to weight gain either.

“Recent subject groups studied in the South Pacific for their regular use of coconut oil in the diet exhibited low incidences of coronary artery disease and low serum cholesterol levels.” (2)

This is largely because MCT are used up rapidly in the body (much like carbohydrates) and they don’t circulate in the bloodstream as do other fats.

Avoid hydrogenated varieties of this oil. Hydrogenation creates the trans fatty acids (TFAs), which have been proven to cause the elevated levels of cholesterol in the blood.

Also, avoid the term "bleached" and "deodorized" as the processes used to bleach and deodorize may add undesirable chemical components to the oil.

These substances are not present in extra virgin or expeller pressed coconut oil. Virgin coconut oil smells mildly of coconut but if you don’t like the smell of coconut choose expeller-pressed instead.

Store your coconut oil in a cook, dark area. You may refrigerate your oil if you like, but it is not necessary to maintain freshness.

It seems so. You can increase your metabolism and lose stomach fat by simply switching the type of oil you use in your meal preparation.
